i am american i heard that yam can be toxic if not cooked properly what do you have to do to make sure its ready to eat.

    • You are certainly confusing this yam with the ‘bitter yam’ which can be toxic when not completely mature. That yam looks more like potatoes. Most varieties of yams don’t contain toxic compounds at all.

        • Hi Ap – there are several species of yam and i think wikipedia identifies the one you’re speaking of as ‘air potato’ u have to cook it well to remove the bitter taste. This recipe is for the regular African yam – you can see it here http://en.wikipedia.org/wiki/Yam_(vegetable)
