Adding Tomatoes is likely to cause a decrease in the natural “slippery” feel your Ogbono is supposed to have so the rule of thumb is to keep ‘em out.
Not to worry, follow these steps and your pot of Ogbono or Apon will still come out tastee.
Which brings us to what you SHOULD add. Here are a list of ingredients and plenty of images to guide you through how to cook Ogbono soup or Apon soup.

I just found your blog and I must say you’ve got some great recipes.
May I please ask that you kindly include measurements to enable us have the right amount of ingredients to make the perfect recipe ie the Pulverized Bell Pepper, Onion, Garlic for example.
how much onion or garlic is enough or too much.
thanks
Ms Spice
Hi Labo, great to have you here.
To serve 4 you would need 4 large bell peppers, a single garlic clove & 1/4 onion. We shall certainly modify this recipe accordingly. However note that this sizes are relative to your availability as they slightly differ in size and flavor depending on where u live & how the fresh foods are grown.
Expect some leftovers – but i’m sure you agree its best to have more than enough so everyone can really fill up on your pot of Ogbono
Hope this helps?
Flo
I guess this is Yoruba style Ogbono soup? Eastern Nigerians usually add at least one vegetable eg pumpkin leaves to their Ogbono soup.
Ms Spice
That’s an awesome tip Flo – yes this is how Lagosians make Ogbono stew and its just delicious. I wonder what the Northern Nigerians add to theirs or if they even eat Ogbono soup at all.
